Jerk Chicken Quesadillas with Mango Salsa




With the delicious slow cooker jerk chicken I made sweet and savory quesadillas filled with jerk chicken and melted cheddar cheese, topped with tangy mango salsa.  The taste combination was out of this world amazing.  This is a winner for sure, that I will definitely be making again... and soon!

Empanadas






























I love empanadas!!!  Savory with a slightly sweet and spicy tone, they simply can't be beat.

This recipe is quite labor intensive because there are a lot of steps involved, but the efforts are  worth the end result!

Food To Entertain: Swedish Meatballs



I channeled my inner swedish chef, and made swedish meatballs.  I must say, my inner swedish chef is pretty darn good.  They were melt in your mouth, delicious.  I made meatball subs slathered with a brown gravy that complimented the meatballs perfectly. Speaking of complimenting, bring these to your next get together and you're sure to get rave reviews!

An Extraordinary Appetizer: Stuffed Eggplant Parmesan




Sometimes, I like to step out of the box and create a new recipe that is unique and that I don't think anybody has done, at least not that I know of. Yes, I had to venture into unknown culinary territory.... I didn't know where I was headed but I like where I ended up. I ended up at a very fine gourmet appetizer of a meal that utilizes one of my favorite meals, Eggplant Parmesan. Although, it does make me want to call it Eggplant Parmesan Sushi for it's obvious resemblance to the real kind of sushi and because I love sushi but I digress.

No it's not sushi but what it is though is something extraordinary and delicious in every sense of the word. What else could that be than tender chicken pieces cooked to perfection, then combined with fresh mozzarella and then wrapped up in panko breaded eggplant and fried.

Chicken Flautas Tex Mex Party With Avocado Dipping Sauce



Chicken Flautas are a favorite of mine to get at Tex-Mex places.  Crunchy, warm, and so very dippable, who wouldn't love 'em.  With a little bit of work, this delicious dish can be made at home, and it is completely worth the effort!  Great for a Friday end of the week celebration, or any night you want to make especially delicious.  These crispy fried tortillas are filled with seasoned chicken, onion, and shredded monterey jack cheese.  Dip these treats in an avocado yogurt dipping sauce to reach flauta perfection.

Game Day & Gluten Free: Onion Petals




Best fried onion deliciousness I've ever had.  Perfectly golden brown with a tasty slice of sweet onion in the middle as a bonus, they just melt in your mouth.  They also have an incredible way of disappearing in front of your eyes.  Oh, and they're gluten free!  However, even if you're not gluten free, you will seriously love these onion petals.

What is a wonderful treat like onion petals if you don't have anything to dip them in?  I thought that these needed something extra special to be dipped in.  So, I made some special balsamic ketchup.  Sweet and savory, it tastes like barbecue sauce meet ketchup.  Ketchup is surprisingly a lot easier to make than you would think.

Project Food Challenge: Egg Rolls

Egg rolls that aren't made from fresh ingredients (e.g. frozen egg rolls) taste that way: not fresh and manufactured.  I've never been a huge fan of egg rolls , and the reason is that I never really had one that was that fresh or made correctly.  This past weekend I tried my hand at making these fried rolls of goodness, and I must say, they were delicious.  They have been something that has always been on my culinary 'to-do' list for quite some time now.  I've always been somewhat intimidated by the huge list of ingredients and all the steps involved.  But as I completed this task, I learned that I don't really have any reason to fear this crispy side dish.  I will explain every step so that you too can make egg rolls that are savory and packed with so much flavor that you'll never settle for frozen again.

Onion rings make a perfect companion to go with those savory game day wings!  You simply can't go wrong with the good ol' onion ring.  They're great along side burgers and hot dogs too.  Crispy and crunchy, these onion rings are coated with seasoned flour, then covered in panko bread crumbs, then deliciously fried.

Game Day: Boneless Buffalo Wings With Buffalo Sauce

Nothing goes better with watching a great game on t.v. quite like some nice and spicy buffalo wings.  These fantastic wings are battered with seasoned flour, then fried until they are golden and crispy, then covered in a homemade spicy buffalo sauce.
