This picture looks good enough to eat. Well, break out the pots and pans, and you too can make this delicious Italian Meatloaf.
Ingredients:
1 24 ounce jar of marinara sauce
2 large eggs
1 medium onion (peeled and grated)
1 cup packaged Italian dry bread crumbs
1/2 cup grated parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
2 pounds of ground beef
1 1/2 cups of shredded mozzarella cheese
1/4 pound sliced salami
Steps:
1. Pre-heat the oven to 350 degrees F. Coat the inside of a roasting pan with non-stick spray, and set aside for later.
2. In a large bowl wisk together 2/3 cup of marinara sauce, eggs, grated onion (to do this I used the blender on the 'grate' setting), dry bread crumbs, parmeasan cheese, Italian seasoning, garlic salt, and black pepper together.
3. Add beef to the mixture and mix well.
4. On a long (12-13") piece of non-stick foil, pat the meatloaf mixture into a 9 X 11 rectangle. It helps to have your hands moist.
5. Sprinkle the mozzerella cheese on the meatloaf leaving a 1" border.
6. Top the cheese with the slices of salami.
7. Using the foil to help you, roll the meatloaf into a log.
10. Pick up the meatloaf using the foil, and place meatloaf on the roasting pan seam side down.
11. Top the meatloaf with the remaining marinara sauce.
12. Bake in the oven for 45 minutes.
13. Let meatloaf rest for 5-10 minutes before slicing.
